For speech — podcasts, lectures, voice-overs — 128 kbit/s is enough: the file is small and the words are clear. For music 192 kbit/s or higher is better, and 320 kbit/s is worth it if you will process the sound or play it on good speakers.

Will the sound be better at 320 kbps?

No, conversion cannot add quality that isn't in the video. If the clip's sound was recorded at 128 kbps, choosing 320 kbps only makes the file bigger.

The uploaded file is used only for the conversion and is never shared with anyone. The original file is deleted right after processing. The converted file is kept for 24 hours — during that time you can download it again — and is then deleted automatically.
